How to Make Delicious Vegetarian Lasagna at Home

There are many variations of lasagna. Vagetarian lasagna is not difficult to make, and it is healthy, utilizing delicious spinach and herbs.

Making lasagna at home is surprisingly easy. Not too many ingredients are required to make homemade vegetarian lasagna, and even novice cooks may prepare the dish in a short amount of time. Following is an easy recipe for spinach and herb lasagna.

Spinach and Herb Vegetarian Lasagna Recipe Ingredients

  • 1 lb cottage cheese
  • 1 lb fresh mozzarella cheese, grated
  • 1 lb fresh or frozen (and thawed) chopped spinach
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh oregano leaves
  • 1/4 cup fresh basil leaves
  • large pack of large lasagna noodles
  • 4 cups tomato sauce
  • 2 eggs
  • 2 large cloves of garlic, pressed
  • 1/4 cup parmesan cheese, grated
  • salt and pepper to taste

Cooking Instructions for Vegetarian Lasagna

  1. Mix cottage cheese, eggs, and chopped spinach together in a large bowl.
  2. Grate mozzarella cheese and stir it into the bowl, aong with some salt and pepper.
  3. In a garlic press, press the two cloves of garlic. Add the garlic to the bowl. Then, pack the leaves of parsley, oregano, and basil into the garlic press, and squeeze, creating finely ground and mashed leaves, and add them to the bowl. Do this with all of the leaves. Stir everything around very well in the bowl.
  4. Boil lasagna noodles in water until tender.
  5. In a large casserole dish, spread a little bit of tomato sauce on the bottom.
  6. Place the noodles over the thin layer of tomato sauce on the bottom of the dish so that they cover all of the space, with minimal overlap.
  7. Spread half of the mixture from the cottage cheese bowl over the noodles, evenly. Spread about 1 1/2 cups tomato sauce over the cottage cheese mixture.
  8. Place noodles over this, covering all of the space, again with minimal overlap.
  9. Repeat step 7 (using the rest of the mixture bowl's contents).
  10. Repeat step 8.
  11. Spread the remainder of the tomato sauce over this top layer of noodles, and cover with grated parmesian cheese.
  12. Bake in the casserole dish for 35 minutes at 350 degrees. Then, remove cover, and bake for an additional 10 minutes. Remove from oven, and serve.

There are many variations to this vegetarian lasagna recipe, as many other vegetables may be utilized, and some of the ones included may be left out. For a spinach and herb lasagna, it is best to use spinach and the fresh herbs used in this recipe, although chopped tomato and other types of cheese are welcome additions. It is also very easy to convert this dish into a meaty lasagna, by lessening the amount of cottage cheese and spinach, and adding sliced sausage or ground beef. Ricotta cheese may also be used in this vegetarian lasagna recipe (instead of cottage cheese) and it is better when meat is used. As many people have different tastes, it is best to experiment with various ingredients and portions to find what works best.
